Terri's White Cherry Pistachio Biscotti
This is SO good!
- ¾ C sugar
- ¼ C light olive oil
- 2 t vanilla extract
- ½ t almond extract
- 2 large eggs
- 1-3/4 C all-purpose flour
- 1 t baking powder
- ¼ t salt
- ½ C Mrs. Mason's White Cherry Pistachio Crumble
Step 1: Preheat oven to 300 degrees. Line a cookie sheet with parchment paper.
Step 2: Mix sugar and oil together in large bowl until well blended. Mix in vanilla and almond extracts, then beat in eggs. Combine flour, baking powder and salt in a separate bowl. Gradually stir into egg mixture until combined. Fold in crumble by hand.
Step 3: Divide dough in half. Form each piece into a 12" x 2" log on prepared cookie sheet. Dough may be sticky; wet hands with cool water to handle the dough more easily.
Step 4: Bake in preheated oven until logs are light brown, about 35 minutes. Remove from oven and set aside to cool for 10 minutes.
Step 5: Reduce oven temperature to 275 degrees.
Step 6: Cut logs on the diagonal into ¾” thick slices. Lay cookies cut-side down on the parchment-lined cookie sheet.
Step 7: Bake cookies until dry, about 8 to 10 minutes.
Optional: Melt a small amount of white chocolate and drizzle on finished cookies. Top with additional White Cherry Pistachio crumble. Yum!

Butter Pecan Brittle Crumble Bars
You can use this recipe with virtually any crumble!
They're very buttery rich!
Butter Pecan Brittle Crumble Bars
Ingredients
- 1 C Shortening
- 1 C Sugar
- 1/2 C Brown Sugar
- 2 eggs
- 2 t vanilla
- 2 C all-purpose flour
- 1 t baking soda
- 1 t salt
- 1-1/4 C Mrs. Mason's Butter Pecan Brittle Crumble
Step 1: Preheat oven to 350 degrees. Grease a 9" x 13" baking dish (preferably glass).
Step 2: Cream the shortening, sugar and brown sugar together until well blended.
Step 3: Add eggs and vanilla and blend for several minutes so dough is fluffy.
Step 4: Combine flour, soda and salt. Once combined, add to dough gradually until it's well blended.
Step 5: Add 1 C of the Butter Pecan Crumble to the dough, reserving about 1/4 C for later.
Step 6: Pour dough into pan and bake for 30 minutes.
Step 7: Immediately after taking it out of the oven, sprinkle with reserved crumble.
Let bars completely cool before cutting. Enjoy!
Options: Add a few handfuls of pecans. Add white chocolate and/or dark chocolate chips. Add a handful of unsweetened shredded coconut. Drizzle with white chocolate, then top with crumble. This is a very versatile recipe. Experiment and have fun!
